64GB is enough for me as well. I back up all my photos on the google photos app. & I have zero movies/music downloaded on my phone though. I use Spotify and stream movies. So I guess it depends on what you typically have on your phone/how much storage you used on your previous iPhone.
The 64GB iPhone 11 / Pro / Max is more than enough for all of your apps, countless hours of video clips filmed and tens of thousands of photos taken. … However, if you stream everything you watch and listen to, and don’t play more than 5 or 6 large games, a 64GB iPhone 11 will suit your needs well.
In regards to your question, I have been using a 64gb iPhone 8+ for 2.5 years, and have found that it's more than enough for me, and like you, I have lots of photos. The important thing to remember is to get what you can afford. That said- I will probably opt for a minimum of 128gb when I get a new iPhone later this year.

It depends a lot. I have 64 GB iPad Air for taking notes but I use cloud a lot, iCloud, Google drive and OneDrive. Apple TV+ for series and Apple Music, so i don’t need download. Have some games and some apps and 64GB is enough because I use the iPad just for work. For most entertainment I use my iPhone Pro Max.
